tips and tricks: the dos and don’ts of banana bread
- don’t overmix your batter
be careful when you’re mixing together your wet and dry ingredients so that you don’t accidentally overmix them. this can potentially cause your delicious banana bread to turn out tough and rubbery. this is one of those cases where, the less work you do, the better the results you get!
2. check to make sure it’s done
there are few things more disappointing than cutting into a nice warm loaf of banana bread only to discover that it isn’t fully cooked on the inside, especially if you’ve already shut off your oven! so make sure to take a toothpick to skewer the center of your bread when it’s still in the oven. if the toothpick is clean, the bread is ready, and if it’s covered in batter, you know you’ll need to keep the bread baking for at least five more minutes.
3. give it enough time to cool
carefully remove the bread from its pan fairly soon after you’ve pulled it out of the oven and put it on a cooling rack. this will help prevent the bottom from becoming soggy and help it cool. once it’s done cooling, cover it in plastic wrap and move it to an airtight container.
