There’s nothing better than the smell of freshly-baked cookies. Unfortunately, a lot of cookie recipes contain flour. Not only are these oatmeal cookies flourless, they’re also egg-free, making them a great option for those who follow a vegan diet. 

Here are the ingredients for flourless oatmeal cookies:

  • 1 ½  cups gluten free rolled oats 
  • ¼ cup sugar of choice (coconut, white, or brown)
  • ½ tsp baking soda 
  • ½ tsp of baking powder 
  • ½ cup of preferred milk (you can use nut milk if you’re vegan)
  • ¼ tsp of salt
  • ¼ cup of chocolate chips (you can substitute other mix-ins such as nuts, raisins, or coconut flakes)
  • 2 tbsp of butter or coconut oil 

To begin, preheat your oven to 350 F and line a large baking sheet with parchment paper. Then, add oats, baking powder and soda, sugar, and salt to a high-speed blender or food processor. 

Blend the mixture until all of the ingredients are combined and the oats are coarse. Add the ingredients from the blender to a large mixing bowl, add in the butter (or coconut oil), milk, and chocolate chips. 

Set aside a few chocolate chips for topping your cookies with. Then, form the dough into small balls and line them evenly on your cookie sheet. Press down each dough ball slightly and top with extra mix-ins. 

Now, all you need to do is bake the cookies for 10 minutes before enjoying!

Flourless Chocolate Cake

You can make flourless chocolate cake that’s just as decadent as the traditional version. This recipe has only six ingredients and offers a rich, fudgy texture. Here’s what you need to make it:

  • 4 oz unsweetened baking chocolate
  • 3 whole eggs (you can substitute flax eggs if you’re vegan)
  • ¾ cup of honey
  • ¼ cup of coconut oil
  • ¼ cup of pumpkin puree (you can use more coconut oil if you don’t have puree)
  • ¼ cup of cocoa powder

Begin by preheating your oven to 375 F and greasing the bottom of a 8-inch springform pan with a generous amount of oil. 

Melt the coconut oil and the baking chocolate together and stir the ingredients completely until smooth. You can either use a double-boiler for this or pop the ingredients in the microwave for 30-second intervals. 

Then, combine the mixture in a large bowl with the honey, pumpkin puree, and cocoa powder. Add the eggs and whisk the ingredients until completely smooth. 

Pour the cake batter into the pan and smooth it out with a spatula. Bake the cake for about 20 to 25 minutes, or until it looks firm. Before removing the cake, let it cool in the pan for about 15 minutes. 

You can also put the cake in the freezer if you want it to cool faster. If you wish, you can top it off with some fresh berries and whipped cream.

Flourless Brownies

If you’re looking to avoid flour and refined sugar, then we’ve got the perfect recipe for you. These brownies are dense, fudgy, and perfectly sweet. Here’s what you need to make flourless brownies:

  • Coconut oil for greasing the pan
  • ¾ cup of medjool dates
  • ½ cup of nut butter (peanut or cashew works best)
  • 1 tbsp golden flaxseed
  • 2 tsp vanilla extract
  • 2 tsp balsamic vinegar
  • ½ tsp baking soda
  • Pinch of salt
  • 5 tbsp cacao powder 

Start by preheating your oven to 350 F and greasing the bottom of a mini muffin tin with coconut oil. Fit your food processor with an “S” blade and add the dates and the water. Combine until smooth and the mixture forms into a paste.

Then, add in the nut butter, flaxseed, baking soda, cacao powder, vanilla, and balsamic vinegar. Process the ingredients until they form into a sticky, uniform dough. 

Scoop the dough out with a cookie scooper into the muffin tin, using about 1 tablespoon of dough per spot. Use your fingers to gently flatten each piece of dough. You may want to wet your fingers with water first, as the dough will be very sticky. 

Bake the brownies for about 12 to 15 minutes, or until the top looks dry. Remove from the oven and allow the brownies to cool for at least 30 minutes. The brownies are very fragile when warm, but will firm up once they cool down

They taste great firm and you can even store them in the freezer.
