Banana Bread Pudding Recipe


we like to think of bread pudding as the best thing since sliced bread. it is easy, uses pantry staples, and has been around since the 11th or 12th century. yet, our version is a little more modern by replacing the bread with gonanas banana bread! try this recipe to impress your friends, and never go back to classic bread pudding.

1 full sized loaf of gonanas banana bread (made according to package)/or 6 mini breads, cut into 24 pieces 

splash of vanilla extract

2 cups almond milk

2 tbsp coconut oil

⅓ cup sugar

2 eggs

cooking spray

fruit (for serving)

powdered sugar (for serving)

 

  1. heat and combine almond milk, vanilla, coconut oil and sugar over medium for 5 minutes. let cool.

  2. beat the eggs together and pour into the cooled milk mixture.

  3. spray the bottom of a 9x11 pan and place cut banana bread at the bottom.

  4. pour egg and milk mixture over the bread. let soak for one hour.

  5. preheat the oven to 350 degrees. bake for 30-40 minutes. it is done when the liquid is set but still slightly jiggly and the edges of the bread are browned. 

  6. enjoy with fruit and powdered sugar!
