BRB Drooling Over These Viral Ice Cream Sandwiches! SO freaking good, I could eat them for breakfast, lunch, dinner, dessert, or any other moment my sweet tooth pings. Not only are these sandwiches delish, but they also only need 4 ingredients!! Your fam will seriously be begging for more of this vegan, gluten-free goodness (and for good reason!). Ready to make the BEST ice cream sandwiches? Meet me in the kitchen to gather up these 4 simple ingredients!
You will need:
- 1 bag of GoNanas Oatmeal Chocolate Chip Cookie Mix
- 1 small ripe banana
- 2 tbsp oil
- 1 pint of your favorite vegan ice cream
Once you have all of your ingredients, it's time to get baking! Grab a mixing bowl, preheat your oven to 350°F, and grease a cookie sheet. To begin, mash the banana and oil in the bowl, then add in the cookie mix and combine well (you can use your hands here) until it forms a dough. Next, form the dough into balls and place them on the sheet at least an inch apart. I made big cookies here for a TRUE ice cream sandwich, which makes about 4-6 big cookies instead of 9. Pop those cookies in the oven and bake for 14 minutes, then let cool.
Once cooled, take a knife and lightly score 2 lines around the ice cream pint (this will make it way easier to cut through) and create a little cut so you can tear off the wrapper. Slice through each line and place each piece on one cookie. Top with your second cookie and unwrap the package from the pint, and there you have a freaking ice cream sandwich.
