Welcome back Nanas and Nanettes! We are back with an even crazier recipe than last week, Salted Caramel Cookie Muffins! Are you ready for the newest yummy, delectable, deliciously insane recipe? Yes? Well then, let's go! I would like to formally introduce you to the recipe that is going to turn your world upside down. This recipe is using 2 of our favorite ingredients to make our new favorite thing. First we have the tried and true GoNanas Chocolate Chip Banana Bread mix. Second, just when you think it could not get any yummer, just to turn things up a notch (let’s just say it…) and half - we decided that this recipe needed Emmys Organic Salted Caramel Snaps. Yeah we know… HOW DARE WE?! Let’s dive into this decadent treat!
This Salted Caramel Cookie Muffin Recipe is - for lack of any better descriptor - INSANE. If I say so myself, and I must say so myself, this recipe will make you feel like you are doing something wrong (this flavor is positively sinful!) but trust me when I tell you that it's oh so right. And with - you guessed it - less than 10 ingredients! Needless to say, one of the many things we LOVE about this recipe is how easy it is. Youk, my sweet little pastry chefs, will be done in a salted caramel snap!
Sister, sister! GoNanas and Emmys have quite a bit in common. We are both gluten free. We are both vegan. And… might I add, we are both incredibly delicious! When we combine Emmy’s Salted caramel Snaps and GoNanas Salted caramel banana bread mix… Well let’s just say that’s when the magic happens. We highly recommend inviting over your closest friends and baking these Salted Caramel Cookie Muffins immediately. Or have a solo night, bake them for yourself, run a bubble bath and turn on your favorite movie cause these Salted Caramel Cookie Muffins put the comfort in comfort food.
Let’s start with the word Cookie shall we? Where could you go wrong? Just like mama used to make, any freshly baked cookie is sure to get your day going on the right path - or set things straight if you’ve had… just a little too much adulting. Chocolate Chip Cookies are, of course, a classic. Home grown. Tried and true. GoNanas Chocolate Chip Banana Bread? I mean, done deal! We are done for! There is nothing quite like a Chocolate Chip Cookie. Except of course… a GoNanas Chocolate Chip Banana Bread confection.
Now, it’s time to elaborate. Muffin. The sensible older sister of Lady Cupcake. She’s not just for special occasions. Muffins are the perfect little decadent snack for when you want to treat yourself. Party of one? Don’t mind if we do. Now of course muffins come in all shapes and sizes, flavors and palettes. There’s truly something for everyone! When paired with COOKIES?! Don’t even get me started. Truly, you had me at “Cookie Muffin.”
Banana babies, we sincerely hope you’re sitting down. Because we’re not stopping at just “Cookie Muffin.” We could. Oh, we know we could. But hold on to your hats because we are adding… SALTED CARAMEL. Say what?! That’s right. Not just savory. Not just sweet. You’ve got the best of both worlds. To quote the singer herself, sweet niblets are right. For a treat as based in duality as the Cookie Muffin - what better flavor profile could there be than SALTED CARAMEL. A little good. A little evil. A lot of yum.
I was introduced to the idea of salted caramel by my aunt. A caramel connoisseur and a salt connoisseur one day she pulled out a tub of chocolate covered caramels and followed it by grabbing some flaky sea salt. I looked at her like she was crazy. Salt?! On caramel?! No way am I trying that. With some major persuading she doctored up the already perfect chocolate covered caramel and sprinkled that flakey sea salt on top and handed it over. I stared at it before cautiously taking a small bite from the corner and this was indeed illegal. ILLEGALLY DECADENT. Now flakey sea salt is a staple in many of my desserts. There's something about that little salty bite that makes even my store bought cookie dough seem like they are made by a 5 star restaurant.
This recipe is no different. These Salted Caramel Cookie Muffins are perfect for any time of day or any occasion. Breakfast? Salted Caramel Cookie Muffin. Afternoon pick me up?
Salted Caramel Cookie Muffin. Late night sweet tooth? Salted Caramel Cookie Muffin. Truly the most perfect versatile treat. Not to mention they are totally guilt free. These little Salted Caramel Cookie Muffin pack huge flavor while being 100% allergy friendly, gluten free and vegan.
