Preheat your waffle maker (I used a mini one). Mix together all ingredients in a bowl (the mix should be thick like regular waffle batter, if it’s too thick you can add a little more almond milk).
Pour 1/4 cup of batter into the waffle maker at a time, cook for 4-6 minutes until golden and crispy.
Mix together the almond butter, date nectar, almond milk, and salt to make the caramel sauce.
Stack and top with banana slices, the caramel sauce, and cacao nibs. Enjoy! 🤍
