Not only are these bad boys absolutely stunningly scrumptious (which needless to say, they are) but they also hit the jackpot - which is to say that they are Dairy Free, Gluten Free, and Grain Free! Now, any recipe featuring our classic and timeless Fudge Brownie GoNanas Banana Bread Mix is already going to be a slam dunk because she is one of our favorite girlies. (Spoiler alert: they are all our favorite girlies.) So, right out the gate, we know this is going to be good. I mean, what could get more decadent than Fudge Brownie, am I right? WRONG! The decadence apparently can be topped adn today we are going to do just that. Let us start by adding PEANUT BUTTER. The deliciousness never ceases. And if that was not enough, let’s just go ahead and make her part BROWNIE too. WHAT?! This is almost too good to be true. Almost. Then, at the risk of sounding totally insane, we have one more element to add to the table. Let’s call the whole thing… a scone. A SCONE! Tea and crumpets, move aside!! Lady Scone is back in town and she is ready to PARTY.
If you know anything about GoNanas, then you most certainly know that we are… Not Your Nanas Banana Bread. I should think by this point that is abundantly clear. However, let me tell you a secret. In this, the summer of coastal grandma chic, the Nanas have it. What she loves, I love. What she wears, I wear. What she eats (you guess it), I eat. So while, in my youth I may have been more of a donut doll, perhaps a cupcake cutie, maybe even a pastry princess - I think it’s time I give grandma her due and ascend into my final form - that of the Scone Siren. The almighty. The classiest of all baked good divas.
But that is enough hype for now (as if there is such a thing) - I think it’s time to get down to the nuts and bolts and what you need to make these delightful Peanut Butter Brownie Banana Bread Scones and send you well on your way down the road to flavortown. Bakers here is what you will need: Grab 2 overripe bananas, 1 egg (plus 1 extra egg for your egg wash), then get ⅓ cup and 2 tablespoons of almond milk (plus maybe keep some more on hand in case the dough turns out too dry). Set aside 1 teaspoon of vanilla extract, ¼ cup of coconut sugar, 1 package of GoNanas Fudge Brownie Banana Bread Mix (oh em gee!! Stay calm, stars - they’re just like us), ⅓ cup of almond or peanut butter, ¼ cup of coconut flour (plus maybe set aside some more if the dough is too wet), 6 tablespoons of cornstarch OR ¾ cup of tapioca flour, and 2 teaspoons of baking powder. Et voila! You are ready to roll. For your topping, all you will need is some melted peanut butter (or almond if that is your nut butter of choice) and a sprinkle of powdered sugar (but that baby is optional). We are ready to go and set up for success!
But wait just a minute! First, let’s talk about it step by step. Here are your handy dandy instructions. First, preheat the oven to 400 degrees farenheit. Then in a bowl, beat together the overripe bananas, egg, almond milk, and vanilla until it’s all nice and creamy. Next, add the coconut sugar, almond or peanut butter and mix it up until it’s all combined. Then, gently mix in 1 package of yummy GoNanas Fudge Brownie Banana Bread Mix, coconut flour, cornstarch or tapioca flour, and baking powder until it’s all combined. If your dough turns out a little too DRY, add in 1 tablespoon more of almond milk at a time - BUT… the dough should not get very wet just so that we can make sure that it’s stiff enough to form into scones. If the dough is too WET, add in 1 tablespoon more of coconut flour at a time. Transfer the dough to a piece of parchment paper sprinkled with cornstarch or tapioca flour. Shape the dough into a semi-flat circle. Use a sharp knife dusted with flour and cut the circle into 8 triangles. Brush each scone with egg wash, and then transfer the parchment paper to a baking sheet (scones can be left in a circular shape touching each other). Bake that all up for 14-16 minutes until golden brown. Drizzle with melted peanut butter and a sprinkling of powdered sugar and snap a gorgeous pic for Insta because you are ready to serve her up!
