In a small bowl, mix together the ingredients for the tacos/pancakes. Once well incorporated heat a large pan or skillet over medium-low heat and coat the pan with a little bit of coconut oil.
Next, pour 2 tbsp of the batter on the pan for each pancake, and cook on the first side for 1-2 minutes. Flip and cook on the other side for another 1-2 minutes. Repeat until the batter is gone.
In a small bowl, mix together the ingredients for the vegan caramel sauce.
Now for the fun part! Arrange the pancakes and fold in the form of little tacos. Fill with greek yogurt, warm berries, or any other desired filling. Then top with the vegan salted caramel sauce. Et Viola!
