Christmas Morning Pancakes
If gingersnap cookies and the perfect breakfast had a baby, it would be these pancakes. I mean, these pancakes are so good they would make the Grinch smile. They also happen to be vegan, gluten-free, nut-free, and better-for-you but taste decadent AF.
1/2 ripe banana
1/4 cup GoNanas Gingersnap mix (any mix can be used but we used the limited edition Gingersnap mix to give this recipe a holiday twist!)
Combine the banana and dry mix in a bowl until smooth.
Heat a lightly oiled griddle or frying pan over medium-high heat.
Pour or scoop the batter onto the griddle, using approximately 1/8-1/4 cup for each pancake. Brown on both sides and serve hot.
*Optional: top with banana slices cut like gingerbread men to get REAl festive & coconut whip cream. Sprinkles are of course always encouraged.
