In a bowl, combine your dough ingredients (except for the cookies) together, adding more flour if the dough is too sticky. On a floured surface, roll it out into a rectangle about 1/2 inch thick.
To make the filling: Combine all filling ingredients in a food processor or blender until smooth. Spread the filling evenly over the dough leaving a 1 inch border around the edge and sprinkle the crushed cookies overtop. Carefully roll it up and slice into 2 inch sections.
Lay the rolls side up in a greased baking dish and bake for 20 minutes until puffed, golden and bubbly.
While the rolls are baking, mix together the frosting ingredients. Set aside.
When the rolls are baked, let cool slightly, then top with the frosting and crushed cookies!
