With the weekend upon us, I can’t think of a better time to give this Cookie Dough Banana Bread Cookie Cake a try! At least, for me, the weekend means that sweet treats are not just a want but a necessity! I’m ready to cozy up after a long week of work and watch Gilmore Girls as I dig into a slice or two or more of this cake! What are your weekend plans? Any parties, hangs, or girls nights coming up? If you are hanging out solo this weekend, like me, no worries, you will have no trouble finishing off this magical gluten free cake all by yourself. ;) There's nothing better than an ooey gooey, soft-baked, melt in your mouth cookie cake with creamy vegan buttercream to kick of the weekend right!
Now that we've established that this cake is a MUST make ;) let's gather together the simple ingredients needed to make this masterpiece! For the cake you will for sure need a package of GoNanas Cookie Dough Mix. Along with the mix you need 1 1/2 cups almond flour, 1 tsp baking powder, pinch of salt, 3 medium bananas, 1 tsp vanilla extract, 2/3 cup cashew butter, 1/4 cup almond milk, and 1/4 cup chocolate chips (or how ever many your heart desires, no judgment here!). Once you've gathered everything for the cake, you will also need ingredients for the vegan buttercream! The simple ingredients needed are: 1/2 cup vegan butter, 1/2 cup vegan cream cheese, 1 1/2 cup RSF powdered sugar, 2-3 tbsp almond milk, 1 tsp vanilla extract, 1/2 tsp salt, and 1 tsp lemon juice. Do you have all of your ingredients?? Great! Let's get to baking!
Put on your favorite baking playlist, preheat your oven to 350F, and get ready to make the MOST delicious vegan cake you have ever eaten! Grease 2 round cake pans with nonstick spray and line the bottoms with parchment paper. This step will make cleaning up way easier! Once your pans are prepared, set them aside and start making the cake batter. Grab a bowl and mix together the mashed bananas, cashew butter, almond milk, and vanilla extract. Next, in a separate bowl, stir together GoNanas Cookie Dough Mix, almond flour, baking powder, and salt. Once both bowls are mixed well, fold the dry ingredients into the wet ingredients. Distribute the batter evenly between the two pans and top one with 1/4 cup chocolate chips. Pop the pans in the oven and bake for 25-30 minutes or until they are a light golden color.
While the cakes are baking, grab a mixer and beat together the cream cheese, vanilla extract, lemon juice, and almond milk. Next, beat in the sugar, salt, and milk until the frosting is thick and creamy. Let the cakes cool and then frost one layer of the cookie cake, top with the 2nd layer along with the remaining frosting! Tada! You have a Cookie Dough Cake of dreams!!
COOKIE DOUGH BANANA BREAD COOKIE CAKE
This gooey, soft-baked, melt in your mouth cookie cake with a creamy vegan buttercream frosting is perfect for any girls night, party, or a night in! With only 25 minutes of bake time, you will be digging into this amazing cake in no time!
1 package GoNanas Cookie Dough Banana Bread Mix
1 ½ cups almond flour
1 tsp baking powder
Pinch of salt
3 small bananas or 2 large ripe bananas
1 tsp vanilla extract
2/3 cup cashew butter
¼ cup almond milk
¼ chocolate chips
½ cup vegan butter
½ cup vegan cream cheese
1 ½ cup RSF powdered sugar
2-3 tbsp almond milk
1 tsp vanilla extract
½ tsp salt
1 tsp lemon juice
For the cake
For the vegan buttercream frosting
Preheat your oven to 350 F. Grease two round cake pans with nonstick spray and line the bottoms with parchment paper.
Mix together the mashed bananas, cashew butter, almond milk, and vanilla extract in a bowl. In a separate bowl stir together GoNanas Cookie Dough Banana Bread Mix, almond flour, baking powder, and salt. Fold the dry ingredients into the wet.
Distribute the batter evenly between the two pans and top one pan with ¼ cup chocolate chips.
Bake for 25-30 minutes or until lightly golden and let set. Let the cakes cool for 20 minutes in the pan, then run a knife along the edge to loosen. Flip the pan over to remove the cake and cool completely on a wire rack.
With a mixer, beat together the cream cheese, vanilla extract, lemon juice, and almond milk. Beat in the sugar, salt, and milk until the frosting is thick and creamy.
Layer the frosting on one layer of the cookie cake, top with the second layer, along with the remaining frosting. Enjoy!
