Crumb Cake

This coffee cake recipe is not only vegan and gluten free, but it's also incredibly easy to make and tastes absolutely delicious! For the cake, you will need 1 bag Coffee Cake Banana Bread Mix, 2 mashed bananas, 2 tbsp almond milk, and 1 tbsp oil. To take this cake to the next level you will need the following ingredients for the filling/topping: 1/4 cup almond flour, 1/4 cup brown sugar, 1/4 tsp espresso powder, and 2 tbsp softened vegan butter. Once you have gathered your ingredients, it’s time to get baking!

To begin, preheat your oven to 350°. Next, grab a bowl and mix the bananas, oil, and milk together. Once combined, stir in GoNanas coffee cake banana bread mix.

In a separate bowl, we are going to make the filling/topping. Mix together almond flour, brown sugar, and espresso powder. Once incorporated, add in the vegan butter.

Add half of the banana bread batter to a greased springform cake pan, add half the filling on top. Spread the filling out over the batter. Repeat the process until you have used all the batter and filling.

Bake at 350° for 45-50 minutes. Cover with tin foil in the last 10 minutes if the streusel starts to brown too much.

Add icing or powdered sugar and ENJOY! Your breakfast is about to be so dang good!!
